Shiso

Shiso (Perilla frutescens)

Scientifically known as “Perilla frutescens”, Shiso is an important ingredient as a condiment or Tsuke Mono agent. Both Aka Jiso (red species) and Ao Jiso (green species) are popularly used in Japanese cooking. The leaves of Ao Jiso, specifically dubbed “Ohba” (meaning a large leaf), always accompany Sashimi or are cut into pieces to serve as a salad topping. They are also often eaten fried as Tempura. Those of Aka Jiso, on the other hand, are mainly used in the process of making Ume Boshi and other pickles to add a peculiar flavour and reddish colour.
