Yuzu Citron
Yuzu is a type of citron, specifically Citrus junos, with its origins in ancient China. For its distinctive refreshing fragrance and stimulating sour flavour, Yuzu has many fans in Japan. It’s popularly used in Suimono (clear soup) and other dishes as an aromatic garnish. There’s even a Tōfu product featuring Yuzu flavour. Most importantly, it makes a delicious Ponzu by blending its squeezed juice with soy sauce. We can’t forget Yuzu Kosho, a fascinating condiment created by mixing pepper and Yuzu essence, for hot Nabe Ryori in winter. And don’t throw away waste after squeezing juice. Place it in a net and float it in a hot bath for Yuzu Buro (a hot bath with Yuzu). It’s a treat for a harsh winter day and is believed to be effective in warding off the flu.
